Fruit cheese does not actually contain any cheese at all! The same goes for fruit butters!
A fruit butter is a sweet, creamy spread made from fruit which has been cooked to a paste, then lightly sweetened. Fruit cheese has a firmer consistancy than fruit butter, and can be cut into slices or cubes.
How to make fruit cheese
- Prepare the required quantity of fruit and place in a preserving pan with enough water to come barely level with the fruit.
- Simmer well until reduced and the fruit is well pulped.
- Rub the pulp through a nylon sieve.
- Measure the pulp and allow 1lb sugar to each pint of pulp obtained.
- Place pulp back into the preserving pan, add the sugar, and dissolve it slowly, bring to the boil (stirring constantly), and boil until setting stage is reached.
- Pot and tie down (see jam making guide) in small jars or bowls.
A fruit cheese contains an equal quantity of sugar to pulp, but a butter has half the amount of sugar, and is therefore made for immediate use.
Fruit cheese is especially good with an oatmeal biscuit and butter, or can be served with cream cheese as a supper time treat.
