You will need:
4 lb Apples
3 lb Brown sugar
1 oz Root ginger
2 Lemons (rind & juice of)
How to make Apple & Ginger Jam:
Wash, peel, quarter and core the apples.
Bruise the ginger thoroughly by pounding with a rolling pin.
Place the apples and sugar, in layers, in an earthenware bowl. Tie the ginger and lemon rind together in a muslim bag, add to the bowl with apples and sugar. Add the lemon juice.
Cover and leave to stand for 48 hours.
Place the mixture into a preserving pan, bring to the boil. Boil rapidly for 20 to 30 minutes, or until it passes the set test. Remove the bag containing the ginger and lemon rind. Pour mixture into warm, pre sterilised jars. Seal the jars when cold.
This is a wonderful recipe for using all of those windfall apples that we normally leave to rot on the ground. The touch of ginger compliments the apple perfectly. Try this jam with cheese on a sandwhich for a delicious lunchtime treat.
