You will need:
1 onion
1 oz margarine
2 small beetroots
Salt & pepper
How to make Beetroot Mousse:
Place the beetroot into a saucepan, boil until tender. Peel and finely chop the onion. When beetroot is cooked, remove the skin, and chop roughly, place into a food processor. While still hot, add the onion, margarine and season to taste. Blend all ingredients together. Place into a buttered basin, cover with greaseproof paper and steam for one hour.
Serve as a starter on it's own, or on a main meal with meat and potatoes.
