You will need:
2 pint cooked beetroot (finely chopped)
2 pint uncooked cabbage (chopped)
1 cupful freshly grated horseradish
½ lb sugar
Pinch cayenne pepper
1 tsp white pepper
1 tbsp mustard
1 tsp salt
1 pint vinegar
How to make Beetroot Relish:
Simply mix all the ingredients together well, place onto the stove and boil gently for ½ hr. Place into previously sterilised, warm jars and seal immediately.
This simple beetroot relish recipe is lovely served with white fish, not only does it taste good, it looks good too.
