You will need:
8oz flour
½ tsp salt
3 level tsp baking powder
2oz margarine
Teacup milk
Pint of ripe, uncooked, washed blackberries
Brown sugar
Cinnamon (optional)
How to make Blackberry Roll:
Sieve the flour, salt and baking powder together and cut in the margarine. Rub together well, add the milk and bring together until you have a soft, but not sticky, dough. Extra milk may be added until you reach the required consistancy.
Knead the dough into a smooth ball and pat out into a rectangle shape, until ½ inch thick. Sprinkle the blackberries over the dough and add brown sugar to your taste. A little cinnamon can be added if desired.
Roll the dough paste like a roly-poly, making sure that the seam is placed downwards on a greased/lined baking sheet. Brush the roll with a little melted margarine and bake in a hot oven for approximately 30 minutes.
