You will need:
8oz Stewed Cherries
2oz margarine
2oz flour
2oz sugar
2 egg yolks
1 tbs milk
½ tsp baking powder
Shortcrust pastry
Vanilla essence (optional)
2 egg whites
2oz sugar
How to make Cherry Meringue Pie:
Stew the cherries with a little extra sugar and leave to cool. Line the bottom of a pie dish with the short crust pastry. Pour in the cherries.
Cream the butter and sugar together, sieve the flour and baking powder together, beat the egg yolks and milk together lightly. Add the flour and the egg mixture alternatuvely to the creamed sugar/butter. When all ingredients are mixed well, flavour with a few drops of vanilla essence if desired. Pour the cake mixture over the cherries and bake in the centre of the oven for 30 minutes (180°C).
Make the meringue from two whisked egg whites and 2oz sugar. When the meringue forms peaks, pile on top of the cherry pie and return to the oven for the meringue to set and become delicately browned.
Serve with cream - a delicious treat for the whole family.
