You will need:
3 lb small, even-sized green tomatoes
1¼ pints of water
½ pint vinegar
1 level desertspoon salt
Pickle:
¼ pint wine vinegar
1 pint water
2 lb sugar
1 fresh chilli (or 2 dried ones)
10 cloves
How to make Sweet Green Tomato Pickle:
Wipe the tomatoes and prick them all over with a fork. Boil water, salt and vinegar together. Pour over the tomatoes and leave to soak for 24 hours.
Prepare the pickle by boiling the vinegar, water and sugar together, with the spices tied in a piece of muslin. Boil for approximately 6 minutes, until a clear syrup develops.
Drain the tomatoes from the vinegar water and place them into the syrup. Simmer until tender. Remove the tomatoes carefully and place into warm, pre-sterilised wide-necked glass jars. Remove the spice bag from the syrup solution and bring back to the boil. Boil for a further 7 to 10 minutes and carefully pour over the tomatoes. Leave to cool and cover well.
This pickle is best served in wide-necked bottling jars.
