You will need:
2 lb Leeks
2 oz Streaky bacon
4fl oz cream
2 Eggs (well beaten)
Salt & Pepper
Flaky Pastry
Oven Temperature:
220°C, 425°F, Gm 7
How to make Leek Pie:
Wash the leeks, trim and cut into ½ inch (1½ cm) lengths. Place into a saucepan and boil in water until tender. Strain and place into a large pie dish. Take the rind off the streaky bacon (give to the garden birds) and cut the bacon into fine strips. Add to the leeks, along with the cream, the 2 beaten eggs. Season to taste. Cover pie mixture with flaky pastry, brush with a little beaten egg, and cook at 220°C(425°F, GM 7), for 30mins.
