You will need:
3 tbsp fresh mint
½ teacupful raisins
2 tbsp tomato ketchup
½ teacupful muscatel raisins
1 tbsp brown sugar
Pinch Salt
Lemon Juice
How to make Mint Chutney:
Wash the mint, dry the leaves and chop very finely. Chop the raisins and mix with the mint. Add the moist brown sugar, the ketchup, the salt and finally, a squeeze of lemon juice. Work all ingredients together well, until the chutney is thick and juicy.
Bottle and store in a cool, dry place.
This simple, easy to make mint chutney is delicious with cold lamb.
