You will need:
Rhubarb
Sugar
Fresh clean mint
How to make Mint & Rhubarb Jelly:
Wash and dry rhubarb without peeling. Cut into pieces and stew until soft and pulpy. Strain pulp through a fine sieve. For every pint of juice allow 1 lb of sugar.
Place juice and sugar into a heavy bottomed pan and add bundles of fresh clean mint. Bring to the boil and boil until the jelly thickens when tested on a cold plate. Stir the mixture often so it does not stick during the boiling process. Remove the bundles of mint before pouring the rhubarb and mint jelly into small steriised pots.
This is a delicious tasting jelly that goes great with lamb dishes. Tastes as good with hot food as it does with cold meat platters. For best results use rhubarb that has pale pink stalks. |
