You will need:
1½ lb peas in pods
1 onion
½ oz butter
1 pt white stock
Few spinach leaves
Sprig of mint
Few parsley stalks
Cornflour
Salt & pepper
Sugar to taste
1/8th pt cream or milk
How to make Green pea soup:
Shell the peas, and wash half of the shells, slice the onion. Melt the butter in a deep pan and gently cook the washed pea pods and onion together for 10 minutes. Add the stock and bring to the boil, add the spinach leaves, the peas and the herbs. Simmer for 15 minutes, or just long enough to cook the peas.
Sieve or blend the soup and measure it. For every pint of soup blend in ½ oz of cornflour (mixed with a little cold milk). Stir cornflour into soup and cook until thickened. Season carefully and add a little sugar to taste. Once soup has come to the boil, take off the heat and add cream.
This is a delicious heart-warming recipe and is ideal for an autumn supper. A handful of small cooked whole peas and a couple blobs of cream can be added to the already cooked soup immediately prior to serving.
