You will need:
1 lb potatoes
2
small onions
1oz margarine
1 pint water
Parsley
Salt and Pepper
How to make Potato soup:
Peel the potatoes and onions, cut into cubes. Place into a saucepan with the margarine. Cover with a lid and cook gently for 5 minutes or so. Do not let the vegetables stick to the bottom of the pan.
Add the water, and simmer gently for about 15 minutes, or until the potatoes are thoroughly cooked.
Set aside a generous, slotted spoonful of potato and onion mixture for later use.
Carefully pour the contents of the saucepan into a blender, and blend until smooth. Hold the lid securely whilst blending. Return to the saucepan, add the reserved potatoes and the washed, chopped parsley. Season to taste with salt and pepper. Reheat and serve.
