You will need:
3 lb good, sound crab apples
2 lb sugar
1 pint vinegar
Spices:
1 piece of root ginger (bruised)
Pared rind of half a lemon
2 inch stick of cinnamon
2 to 3 Cloves
1 tsp all spice (Pimento)
How to make Spiced Crab Apples:
Wash and pick over the crab apples, discarding any bruised parts.
Place the sugar and vinegar into a saucepan and heat slowly, stirring occasionally. Add the apples.
Tie all the spices into a small muslin bag and add to the fruit. Cover the pan and cook until the apples are just tender. Remove the fruit carefully, using a perforated spoon, and pack into small to medium sized pre-sterilised jars. Strain the liquid and remove the spices. Return the liquid to the stove and boil it in an uncovered pan until it is the consistency of syrup.
While the liquid is still hot, pour into the jars containing the apples. Make sure that you cover the fruit entirely, and at least ½ an inch above it. Seal tightly and store in a cool dark place for at least 6 weeks before using.
