You will need:
2 lb Spinach
2 tbsp Olive oil
1 Clove of garlic
Salt & Pepper
1 oz Sultanas
1 oz pine kernal nuts
How to make Spinach Italiano:
Cook the spinach in slightly salted water until soft. Drain and press out any excess water. Chop coursley. Peel and chop the garlic. Warm the oil in a large flat bottomed pan,
add the spinach, garlic. Season to taste. Toss the spinach and garlic whilst warming through, do not fry it. Wash the sultanas in boiling water to make them plump, drain and add to the spinach along with the pine kernal nuts. Reheatthe ingredients in the pan whilst tossing continually. Serve hot.
