You will need:
4 lb strawberries
2 lb granulated sugar (or preserving sugar)
Juice of 1 lemon
½ oz butter
How to make Strawberry Jam:
Crush a small cup of strawberris with a silver fork and place in a heavy bottomed pan with a good spoonful of sugar. Melt over a low heat then add the remaining fruit and bring to the boil, stirring occasionally. Warm the remainder of the sugar in the microwave and add to the pan, along with the lemon juice. Bring back to the boil, and boil rapidly for about 12 minutes or so. Test for setting and stir in the butter to finish. Pour into warm, dry, sterilised jars and seal well.
This is a lovely simple jam that can be enjoyed for many months or even years to come.
